The beginning of the week, I dropped 7 lbs (as mentioned in a previous post) Friday, Saturday, Sunday, and Today.. I have been at a stand still. I think tomorrow, I will have lost 2 lbs. But we shall see. I went walking/running today at Cottage Hill Park on my lunch break. It was so glorious to be outside! I’m going to make going to cottage hill park during lunch a habit. It wasn’t at all a burden.. it was more like a treat. I love being outside.. especially when I am in a pretty much windowless world from 8-5 every work day. It’s so depressing.

I’ll post a few pictures from the weekend. Besides the Beef and a small piece of strawberry cake on Sunday.. I did well, I guess. I definitely did not exceed 1300-1400 calories.  Sunday I probably came close. We had the chili cook off at our church so I had a small bowl of that. I wanted seconds SO bad! That chili was delicious. But I didn’t let myself.. I had already had that piece of cake at a wedding shower earlier that day. I forgot my camera all day on Sunday so I did not get to take any pictures. Well, I should have with my phone but it was dead 🙂

This was my Friday lunch. 600 calories. (Yeah, I got the foot long) I WAS HUNGRY!

TODAY was good. For breakfast I had a peanutbutter/oatmeal cliff bar. That flavor has 270 Calories.

Snack time was the Kashi Bar with 130 Calories

130 Calories Kashi Bar. It's growing on me.. but I still like the one with chocolate and coconut better!

Lunch was a String Cheese and one of my Turkey and Cheese Sandwiches. Those are about 200 Calories and the string cheese was 50 Calories. So 250 Cal for lunch.. Then I went and walked it off at Cottage Hill Park. I walked and ran, actually.. I want to be able to run three miles again! lol AND I am planning on doing the AZ Trail. FUN! So Might as well get ready for it. Today, I only had time to do 2.8 miles. But Hopefully, the faster I get, the more I will be able to walk.

Tonight for dinner.. I don’t know what I”m doing. I read a recipe of Recipezaar for roasted chicken and veggies.. IT called for whatever veggies, and onion soup.. and oil. So that’s what I did. THe chicken was good. The veggies are taking a really long time to get tender. I should have put a top on it but the directions said not to. This is uncooked:

Probably no more than 400 Calories.

YUM. Let’s just see how many ways I can cook chicken! HA..

Well, the veggies are beeping.. I’m going to go see how it turned out. Today, my total for calories is….. Well, you can figure it out! 🙂

      Ashley.. I don’t think I look that different yet. Matt says he can tell a difference. I guess when I get into a size 14, then I might take some pictures. I’ve only lost 19 lbs. So I weigh a little less than I did a year ago. When I lose another 19 lbs.. then I might take some after pictures 🙂

    Aside from the chicken being raw, that dish looks really good! Can you post a link or tell me its name on recipezaar? I also wanted to tell you that it is entirely possible to make healthy chili. I buy the leanest ground beef I can buy, brown it, drain it and rinse it off. This leaves very little fat. I’m sure you can use ground turkey as well. The browned meat goes into the crockpot with a pack of chili-o seasoning (or anything like that) a large can (28 oz I think) of diced tomatoes and 1 or 2 cans of dark kidney beans. I also like to put in a tiny can of diced green chiles and maybe chopped onion.I let it cook all day on low and it’s ready when I get home. I usually put a little Fat free sour cream on mine too. I have 4 bags of this chili in my freezer right now. I just might have some tomorrow.

      Well, I did not make the Chili.. it was already made and I can assure you, non of it was healthy 🙂

      The recipe is just under Roasted Chicken and Veggies (I think) You basically use whatever veggies you want, Chicken, Onion Soup mix, and a little bit of oil. Bake until veggies are tender. Very easy recipe! It was good too!

      Thanks, JD! I started January 4th and have been consistent with it. Matt has lost 22 lbs and I have lost 19. We are going to keep on keeping on! 🙂

      Thanks for the encouragement. Stick with writing. It’s a good release and people will read. I’ve had over 1000 views! (Many are repeat visitors but it’s still encouraging) Please tell Vicky I said hello!
